The succession of scandals concerning food that have occurred in Europe, especially in recent years, have greatly undermined consumer confidence in the safety of the foodstuffs available on the market and in the accuracy, efficiency and effectiveness of the controls undertaken to protect the public’s health. In order to respond adequately to the legitimate needs and expectations of consumers and to regain their confidence, the European Community’s Food Safety Commission published their white paper on food safety in January 2000, proposing stronger integrated measures to guarantee food safety of the highest level and the creation of a Food Authority based on the principles of independence, scientific excellence and transparency. In this work we analyse the development of the regulations regarding food safety and the strategies for protecting European citizens’ health rights.
