A method for the determination of arsenic, cadmium, chrome, iron, manganese, mercury, nickel, lead, copper, selenium, pond, zinc in samples "sottocularino" of "Salame S. Angelo IGP”, with 30 days of seasoning, is described. The determination, previous opportune mineralization of the samples, is carried out by atomic absorption spectrophotometry continuum source in furnace for arsenic, cadmium, chrome, nickel, lead, copper, selenium, tin and in flame for iron, manganese and zinc. The mercury was determined by dedicated instrumentation AMA 254. Quantitative analysis is carried out by calibration line (linear regression lines) with a good linearity in concentration range examined (R2, 98% order). Good recoveries were obtained (90-95%) making appropriate additions to three levels of concentration. The standard deviation on six independent aliquots of sample was in the range 2.0 – 9.4. The limits of detection were of ppm (mg/kg) order, except for mercury that was of ppb (mg/kg) order.
