The effects of different fibre sources in concentrate for dairy asses on milk fatty acid composition were studied on 16 Martina Franca asses, divided into two groups fed concentrates containing either wheat bran (group A) or dehydrated beet pulp (group B). The trial lasted 84 days. On both feeds and individual milk samples, fatty acids were analysed and the quality indices calculated. The dietary treatment significantly influenced the milk content of SFAs (A:52.81% vs. B:56.23%, P=0.026). No significant differences were observed for milk MUFAs (A:24.43% vs. B:22.80%; P=0.065) and total PUFAs (A:22.77% vs. B:21.02%, P=0.075). As regard to the milk quality indices, group B showed a higher atherogenic index (A:0.93 vs. B:1.12, P=0.001) while no difference was observed for the thrombogenic index (A:0.54 vs B:0.59, P=0.179).
