Recent studies of oxidation of vegetable oils, by means of direct insufflation of air on olive oil samples, pointed out phenomena of stripping of the volatile substances that involved the alteration of the second order spectrophotometric profile of the above mentioned samples. This influenced the result of the prevision test of shelf-life of vegetable oils, which has the main objective of the research. Therefore, with the intention of seeking a valid solution to such problems, the influence of H2O2 on the oxidation of vegetable oils has been evaluated. Preliminarily, several virgin olive oil samples with different degree of preservation were tested to find the optimal experimental conditions of concentration, temperature and light exposition. The results have highlighted a good synergy of the H2O2 and the Co(II) 4-cyclohexylbutyrate, to favour the oxidizing process in a decidedly short time. Hence, a significant simplification of the method was achieved, thanks to the utilization of routine materials and equipments. In this way the difficulties described above, maintaining the kinetics of the reaction within values comparable with those recorded previously, has been overcome
