A lot of experimental studies have demonstrated that many bacteria strains isolated from tissues of fishes post mortem were capable of showing decarboxylase activity, that is, production of histamine and other biogenic amines. Fishes storage temperature affects the amount of this production. The AA have examined some fishes caught off northern coast of Sicily, over all Messina and Eolian Islands. This study put in evidence how levels of polyamine produced can be influenced by the storage conditions and the bacteria, that generate them, are common in marine environment, can occur in the gills, skin and within the gut of fishes and can increase over a wide range of temperature.
