In this chapter, after a short description of the results limited to qualitative studies and to the determination of single components will be deeply described the composition of industrial oils from Calabria separate from those obtained in other geographic areas; then commercial oils of unknown origin will be reviewed, and fi nally those extracted in the laboratory. Some information will also be given on the composition of bergapten-free oils and on oils extracted from immature fruits, as well as on the oils recovered from the cold-extraction residues and on results obtained by particular analytical techniques. The parameters which infl uence the composition of cold-pressed peel oils will also be discussed.
