Nowadays, there is a high demand all over the world about food production, food quality and the corresponding effect on human health. In fact, governments and institutions have established specific regulations to be followed by food companies. Foodomics, by including transcriptomics, proteomics, metabolomics and genomics, has the capability to achieve precise information about food composition, traceability, safety, functionality, and bioactivity. In order to enter into the details of these different but interconnected sections, in this chapter we discuss the use of nuclear magnetic resonance (NMR) techniques in the field of green foodomics.
