The authors purpose an elaboration system of autocontrol results of 3 slaughtering bovine cycles of 3 different slaughter-house, transforming the results of sensorial, phisical and microbiological monitoring into homogeneus cardinal numners. They obtain a numerical index for every slaughtering cycle and compare it with that obtained by "quinck" monitoring. They obtain good correlation and conclude that this system can improve the evaluation results of autocontrol and reduce the number and frequence of bacteriological monitorin of carcass.
