This review shows a general picture about the Islamic Halal production; the market situation and Halal certification system in Italy are also described. The Italian certification system for Halal products is detailed and the “Italian Technique Specification for the Halal certification of food products“, together with the “Regulation for the Halal certification of food products and for the logo and trademark use” are reported on. In this context, Halal standards criteria for hygiene, safety and high quality systems are considered as some significant elements to be integrated in the certification system. The aim of this review is to show the state of the art about Halal food certifying in Italy.
