The process of globalization that has characterized the new century has resulted i the change of the economic and political environment in the world. Agricultur has not been excluded from this global scenario, redesigned according to th principles of market liberalization. The agriculture and the agri-food system i particular, are subject to conditioning deriving from the evolution of the economi political and legal international framework (Lanfranchi M., Giannetto C., Puglis A., 2014). The agricultural field, increasingly, more and more perceives th urgency of more rigorous and demanding policies, careful to interpret, in additio to the demands of the consumer, also the protection of the man and hi psycho-physical well-being in order to catch up easier an important goal, that o food security. The objective of this paper is to deepen study on the buying habit of consumers of food products and the degree of information asymmetry tha characterizes the demand for foodstuffs. In the order to conduct the analysis o consumer behaviour a questionnaire was used to acquire the information neede for the purposes of the paper. Then a model for the binary variable relative to th habitual consumption of typical products was determined. In this paper, th research team has developed the Cumulative Proportional Odds Model.
