In the meantime, consumer perceptions on the respect of their health, welfare, and quality at the market stages are increasing. At present, in the current legislation, there are no specific regulations on the welfare of crustaceans as food. The authors briefly review the scientific background on crustaceans’ welfare, consumer perception in welfare and quality of these fishery products; soft and hard laws in this topic are also considered, together with some studies carried out in Italy.
