The aim of this contribution is to give a statistical representation of some results obtained in letterature, choosing as statistical population a set X1 constituted by 26 species of horticultural plants. Some features of horticultural products are considered as sample variables, each of them having a frequency distribution. In particular the parameters taken in account are contents of nitrates, crude fibre and vitamin C. The authors give a deepened study to obtain detailed and accurate statistical results, to better compare them with the values recommended by medical standards to promote the consumption of the vitamin C and crude fibre,in a healthy diet to prevent diseases. It is seen that the average values of crude fibre and vitamin C contents of the examined plants, agrees with these recommended values. A review is given of results derived in previous papers.
