Foodomics is the application of advanced omics approaches for the analysis of food composition, food authenticity, and food quality. Among the different approaches, lipidomics, the metabolomics branch that studies lipids within a living system, has been widely applied in order to trace the origin of food, to explore food adulteration, and to determine harmful lipids in food processing and storage. Both foodomics and lipidomics greatly took advantage of mass-spectrometry-based approaches, alone or coupled with separative techniques. This chapter will discuss the biological importance of fatty acids such as omega-6 and omega-3, their abundance in various foods, and the MS approaches used for their analysis.
