Octopus vulgaris specimens are frequently sold clearly fresh but totally devoid of typical salty taste. This observation induced the Authors to search the sulphites in market cephalopodes samples. That because, some previous experimental investigations in fish, revealed these chemical substances interfering in normal evolution of some organoleptic charcters. In the present investigatio Authors find the residues in low percentage of sample; furthemore they experimentally confirm the connection between assence of typical taste and sulphite treatment. The persistance of residues is modest anyway.
