This Phd thesis aimed to develop a fast and easy method to characterize the Marsala wines in relation to the production technology, and aging by ATR-FT-IR spectroscopy combined with different multivariate analysis. It is expected that this method could be useful not only to erify the conformity of the Marsala wines to the label declaration but also to monitor the aging period of the wines in the winery supporting the enologist's experience by objectice data.

Abstract

This Phd thesis aimed to develop a fast and easy method to characterize the Marsala wines in relation to the production technology, and aging by ATR-FT-IR spectroscopy combined with different multivariate analysis.
