The aim of this contribution is to give a statistical representation of some results obtained in literature, choosing as statistical population a set constituted by 26 species of horticultural plants, used in Mediterranean diet, and to show as their consumption has benefits on human health. Some products of these horticultural plants are considered as sample variables, as nitrate, crude fibre and vitamin C contents. Their frequency distributions and graphic representations are constructed and statistical evaluations are carried out. It is seen that the average value of nitrate contents, ingested by human organism through the consumption of the analyzed fruits and vegetables, is lower than the risk limit value for human health and that the average values of crude fibre and vitamin C contents, that contrast the nitrate negative effects, are in agreement with the values recommended by medical standards to prevent diseases. These results show that those who follow Mediterranean diet live better, in good health and live longer.
